Cut away any unripe parts of the strawberries.&lt;br /&gt;&lt;br /&gt;2.Slice the banana into 1/2 inch slices and place in a large fruit salad bowl.&lt;br /&gt;&lt;br /&gt;3.Peel the kiwis with a paring knife and slice each one into eight wedges, add to salad bowl.&lt;br /&gt;&lt;br /&gt;4.Wash the apricots, halve, remove the pits, and cut into wedges.  Place in bowl.&lt;br /&gt;&lt;br /&gt;5.Remove seeds from the half muskmelon and use a melon scoop or teaspoon to scoop out balls of melon. Add to bowl.&lt;br /&gt;&lt;br /&gt;6.Wash and halve the pears, and remove the cores and stems. Cut the pears into thirds then for each third, cut wedges. Add to bowl.&lt;br /&gt;&lt;br /&gt;7.Sprinkle the 2 tsp sugar on the fruits in the bowl. Add sumac, parsley and half of the lemon juice. Continue mixing using your hands. Taste to see if it is tart enough. It should taste sweet and spicy and tart. Add more lemon and sumac as needed. Season with black pepper and red pepper flakes as well as salt.&lt;br /&gt;&lt;br /&gt;Serves 4. Stir into the gelatin mixture, mixing well. Then pour into a 1 1/2 quart mold.
