Summer fruit salad


1 pint raspberries
1 pint strawberries
1 pint blueberries
1 banana
2 kiwis
4 apricots
1/2 of a small musk melon
2 pears
1 pint whipping cream
1 tsp + 2 tsp sugar
1 tsp vanilla


1.Trim the stems off the strawberries and slice the strawberries into quarters, or smaller for very large berries. Cut away any unripe parts of the strawberries.

2.Slice the banana into 1/2 inch slices and place in a large fruit salad bowl.

3.Peel the kiwis with a paring knife and slice each one into eight wedges, add to salad bowl.

4.Wash the apricots, halve, remove the pits, and cut into wedges. Place in bowl.

5.Remove seeds from the half muskmelon and use a melon scoop or teaspoon to scoop out balls of melon. Add to bowl.

6.Wash and halve the pears, and remove the cores and stems. Cut the pears into thirds then for each third, cut wedges. Add to bowl.

7.Sprinkle the 2 tsp sugar on the fruits in the bowl. Stir to coat all fruit.

8.Add the 1 tsp sugar, whipping cream, and vanilla to a mixer bowl, and whip the cream on high speed until it starts to sound hollow.

9.Pour the whipping cream mixture over the salad and sprinkle the berries over that.
