Iowa Potato Salad Recipe

Potato salad recipes:
2 1/2 lbs small red potatoes, scrubbed and cut in 3/4-inch pieces
1/2 cup light mayonnaise
1/2 cup reduced-fat sour cream
1/4 cup cider vinegar
1/4 cup honey mustard
2 cups frozen green peas, thawed
1 cup thinly sliced radish
1 cup chopped celery
1 cup chopped onion
2 hard-boiled eggs, sliced

Directions:
firstly cook potatoes in water to cover 15-20 minutes until just fork tender then whisk dressing ingredients plus 1 1/2 teaspoon salt and 1/2 teaspoon freshly ground pepper until very well blended.

lastly drain potatoes; place in a large bowl and while hot add half the dressing and toss to coat.
